While the sweet potatoes are cooking the chicken breast will be prepped: take a chicken breast (roughly 6 ounces) and dice it. Once the sweet potatoes are starting to get lightly browned, add the chicken breast to a pan with a tablespoon of olive oil and allow it cook fully. While the chicken and sweet potatoes are cooking keep a cover over it. To finish the dish, take an apple and dice it (about a ½ cups worth) and add it to the pan. Do not cook the apples too long or they may turn to mush. Lastly, you may want to add some cinnamon. This is one serving, but you can make an even bigger batch to store in the fridge to use through the week.
